Gluten-Free Ginger Cookies

I just tasted something I never again expected to have: A gluten and soy free ginger cookie that's crisp and lacks the funky aftertaste that some rice-based commercial cookies have. IOW, it tastes every bit as good as 'real' ginger cookies, and is heavy on the ginger.

So here's my hearty recommendation for gluten-sensitive ginger cookie lovers to try Pamela's Spicy Ginger Cookies, the ones with 70% organic ingredients, which are part of a new line of product. They're worlds better than the brand's previous ginger cookie recipe, which always seemed too doughy and rice-flavored. Pamela's makes some other good ones, & I particularly recommend the varieties with nuts.
