The decline of the New York bagel.
Sometimes what we find in the NY Times truly amazes us. For example, we would never have imagined that the fate of the bagel was so closely tied to how bakery owners mechanized bagel-making and broke the NYC bagel-makers' union. Of course, this history is buried in an article about where to find the best bagels, but at least it's there.
